Rosemary, an aromatic herb, is a member of the mint family like many other healthy herbs such as basil, oregano, and thyme. Pork Tenderloins with Apple and Rosemary

What do you need:

  • 1 1/4 pounds tenderloin steak

  • 1 1/2 cups hard apple cider

  • 3/4 cup maple syrup

  • 1/4 cup all-purpose flour

  • 3 apples, cored and cut into 1-inch pieces

  • 1 large onion, cut into 1-inch pieces

  • 5 tablespoons of brown sugar

  • 4 teaspoons dried rosemary

  • 1 1/2 teaspoons dried marjoram

  • 1 1/2 teaspoons dried thyme

  • Salt and ground black pepper to taste

  • Purified water

Place the pork loin in a large bowl. Combine rosemary, marjoram, thyme, salt, and pepper in a small bowl. Rub the mixture evenly over the pork and then the cider over it. Add purified water to fully submerge meat. Cover and refrigerate for at least 6 hours to overnight. When done, place the tenderloin in a roasting pan, to marinate over it, and then bake in a preheated oven (325 F) for 1 hour. Scatter the apple and onion pieces over the roast, then drizzle the brown sugar evenly over the pan. Return the roast to the oven and cook for another hour. To make the sauce, cook the flour in a skillet until lightly browned. Add the fat from the roast and maple syrup and cook, stirring constantly, until the mixture thickens. Serve roasted with sauce.

Creamy pea and rosemary soup

What do you need:

  • 1 3/4 cup chicken broth

  • 1 1/2 cups split green peas

  • 1 carrot, chopped

  • 1 chopped onion

  • 1 leek, thinly sliced

  • 2 garlic cloves, minced

  • 2 bay leaves

  • 6 slices of bacon, cut into 1-inch pieces

  • 1 teaspoon chopped fresh rosemary

In a large skillet over medium heat, cook the bacon bits until crisp. Add the carrot, onion, leek, and garlic and cook until the vegetables are tender, about 8 to 10 minutes. Add the chicken broth, split peas, bay leaves, and rosemary to the mixture and bring to a boil. Lower heat, cover, and simmer, stirring occasionally, for 1 hour or when peas are cooked. Serve warm.

Rosemary Ham Casserole

What do you need:

  • 1 kg. cooked ham, cubed

  • 5 eggs

  • 1 garlic clove, minced

  • 4 cups of purified water

  • 2 cups shredded cheddar cheese

  • 1 1/2 cups of milk

  • 1 cup of sand

  • 1/4 cup butter

  • 1 teaspoon chopped fresh rosemary

  • 1 teaspoon salt

  • 1 teaspoon cayenne pepper

Layer the cooked ham in a saucepan and set aside. In a medium saucepan, bring the water to a boil, then pour the grits into the water. Lower the heat and bring to a simmer, stirring constantly, for about 4-5 minutes or when the grits are thick and tender. Add cheese and butter with grits. Remove from heat and set aside. In a medium bowl, whisk together the eggs, garlic, rosemary, salt, and pepper and combine the mixture with semolina. Pour the grits over the ham and bake in a preheated oven (350 F) for 40 to 45 minutes or until the casserole is bubbling.
